In 2018, our new wine-making and aging cellar was finished. We constructed the building on the side of the company courtyard through a low environmental impact project.
A temporary piece of art by the artist Franco Menicagli was installed in our barrel cellar. This work of art was made of basic recycled materials, symbolically becoming the product of man, making its fleeting nature obvious. The work of man is fragile and strictly dependent on what surrounds it, therefore a dynamic relationship is created between nature, people and work. In art, as in wine-making, the concept of a system that binds man to the environment is a basic principle, this then brings a work of art to life, makes it dynamic, transmitting personality and colour to the wine.
We use modern and traditional techniques for our wine-making, ranging from fermentation and maceration in steel at a controlled temperature, to making wine in open barrels. We change the methods used depending on the type of grape in order to obtain regional and elegant wines.
What is particularly interesting is open-barrel alcohol fermentation which is used to produce superior red wines, a process that requires skill, attention and a lot of manual work. Fermentation takes place perfectly and naturally with only natural yeasts. During this process, manual punching down is repeatedly carried out, which encourages different components to be incorporated.
This type of fermentation gives very interesting and specific results, which accurately reflect the grapes and the region that they come from. The combination of the grapes' fermentation phase and the new wood of the barrels generates a perfect harmony between these two components and a tannin of great finesse. Once the alcoholic fermentation is over, the racking takes place. The barrels are closed and the wine is left to age.
Our company produces about 60,000 bottles per year, and is expressed through both our BOLGHERI CLASSICA line, careful work that has resulted in discovering the potential of the Bolgheri region and its typical grapes, as well as our ARTISTIC COLLECTION where the attention that is paid to the different pars of producing wine has been enriched by exploratory incentives and where the land and grapes are able to be manually worked is all associated with a creative vein, with something artistic or rather artisanal. Our wine labels are images of works of art and represent the inseparable bond of producers "between life and grape".
